Relatively distinct fruity upfront aroma, like melon. The sweetness and flavor flow gently over the tongue with a swooshing, slightly carbonated escort. As soon as the carbonation moves to the back of the throat, the flavors that were on the tongue until then float away, leaving behind a lingering bitterness and a rich return aroma. This is a bottle where you can really feel the clean and balanced taste of Miyamanishiki from Nagano Prefecture.

As soon as the bottle is opened, an aroma reminiscent of fresh Muscat gently wafts through the air. The mouthfeel is soft, and in contrast, a gorgeous slight fizz appears. The pleasant carbonation seems to break the bottle, and a honey-like sweetness flows out onto the tongue. The sweetness is firm, but delicate, as if it were wrapped around the tongue, and yet it has a luster that makes you want to pour it down your throat immediately. There is very little acidity. The moment when the attractive sweetness dissolves into a subtle bitterness is artistic.

Although it is called "super dry", it has a harmonious balance that is not flimsy, yet it also has tactile stimulation to delight. I was put off by the name "dry", but it is still Dai-Shinshu. I have to admire the harmonious taste.

It has a bouncy mouthfeel, but it is not too light, and the bitterness brings down the anchor of the aftertaste. It is said that a yeast with high malic acid production is used, and like a saison in beer, I think this sake is suitable for early summer afternoons. The balance of sweetness, sourness, and bitterness gives it an exquisite youthfulness.
