100% Hitachinishiki Rice polishing ratio: Koji rice 50%, Kake rice 55 Alcohol content 15-16%. I had a chance to visit Ibaraki Prefecture, so I bought this at a local supermarket. It has a crisp, slightly dry taste that is typical of Junmai-shu. It's not a flavor that's popular these days, but I got the impression that the brewer made it well.

100% Yamada Nishiki Polishing ratio 50%. Alcohol content 16 degrees I happened to see this bottle at a liquor store, and the label and name were unique, so I bought it. It is made with 100% Yamada Nishiki from Yamadasho-cho in Hyogo Prefecture. It is moderately fruity and easy to drink, but the taste of the rice is strong and it gives the impression of being dry. It is not a bad match for a meal. The label says that the brewery is located in Nagoya City, Aichi Prefecture. It's rare to find one in the city center. I would like to try it again if I have the chance.

Raw rice: Domaine Sakura, Kaminoo Rice polishing ratio: 90 Alcohol content 14 degrees This was my first purchase of Senkin's sake, which I had been interested in from the rankings on Sake no Wa. The sake is organic and polished to 90% rice, so I was looking forward to seeing what it would taste like. When I tried it, the taste was unexpected in a good way. Even though the rice is polished to 90%, the aroma is fruity and melon like. It tastes like it could be drunk in a wine glass. It was a very unique sake, and I would like to try the other brands of Senkou.

Harushika Junmai Ginjo Namazake Rice polishing ratio 60%, alcohol content 15 I tried Harushika for the first time because it was on sale at my local sake shop. It has a fruity flavor that is typical of ginjo-shu, but it is not too sweet and is very easy to drink. It goes well with meals and I would like to drink it again.

Alcohol content 16 degrees Polishing ratio 50%. I found Koko's Junmai Daiginjo nama sake and got it. It is clearer and more fragrant than the Koshi Junmai Daiginjo nama-shu we drank before. It is indeed a Junmai Daiginjo. It was easy to drink and I was able to finish the second bottle in no time at all, even though I drank three highballs outside.

Sake Komachi from Akita Prefecture, Polishing ratio 50%. Alcohol content 17 degrees I got it while shopping at the outlet in Sakai. It is a Junmai Daiginjo, but it is not too sweet and has a good taste. It is easy to drink, and we enjoyed it as a sake during meals.

This is a rare No.1 bottle production. My wife bought it and I drank it. Compared to the Asahi Rice Junmai Daiginjo I drank the other day, it is harder on the palate, has a messy taste, and leaves a slightly bitter aftertaste, but this is not a taste I dislike. If I encounter it again, I would like to buy it.

I found Junmai Daiginjo made with Okayama and Asahi rice by Saku, so I bought it. It had a strong sweetness, but it was refreshing. Personally, I had the impression that it was a little too sweet. It was so sweet that I felt it was better to taste the sake by itself rather than with a meal.

At a local sake shop, I got a bottle of Shippotan's Junmai Namaishu Junmai Sake. And it's not just regular Junmaishu, it's labeled "Ura"! I'm drinking it without understanding what "back" means (sweat), but it's a junmai-shu with a tangy spiciness typical of Shippotan. Still, perhaps it's the spiciness in the clean taste, but it goes well with food, and I enjoyed it very much!

I found a 300cc bottle of Iinuma Honke's Koko Junmai Ginjo (raw sake) at my local supermarket, so I bought some. It has a very fruity taste and I was surprised at how fruity it was, especially at the first sip. However, I also compared it with a meal, but perhaps because of the strong aroma, I felt it tasted better when I drank the sake alone.

Today I drank Sotenden (Special Junmai Sake) from Otokoyama in Kesennuma City, Miyagi Prefecture. It's been a couple of years since I've had Sotenden. I drank it with grilled scallops and clams, and it went well with them, probably because it is a sake from a port town. Even with seafood, it had no peculiarity, was clear, and could be drunk easily. It tasted better than when I drank it before, and I got the impression that it had gone up a level!

I found Hakurakusei Junmai Daiginjo at Hasegawa Sake Shop in Tokyo Station, so I bought it. The label says that it aims to be "the ultimate shokuchu-shu". I tried it with different foods. First of all, I had a glass before having a meal. The moment it enters the mouth, it has a rich aroma and sweetness, but it is crisp and clean through the throat. After that, I ate cheese, oysters, sashimi (tuna, flatfish), chicken thigh meat, natto (fermented soybeans), etc., and drank it while the aftertaste remained in my mouth. The result was oyster > natto > sashimi > cheese > chicken thigh meat. Maybe it's just a coincidence, but I found that it went well with things that had a smell or a peculiar taste, and it was delicious to drink with seafood. Especially with oysters, I thought the smell of the oysters and the sake would fight each other, but as the aroma of Hakurakusei spread to the lingering smell of the oysters in my mouth, the flavor of the sake increased and I couldn't help but smile. Highly recommended! I will also try the others.

It is a junmai ginjo-shu made from Miyamanishiki with a milling ratio of 55%. It was a limited version for the summer of 2021. It is a very fruity and fragrant sake, so fragrant that the aroma lingers for a while after you finish drinking it. This was my first time drinking Tenju Shuzo's sake, and I would like to buy it again.
