We were able to drink sake for the sake competition again this year. There are only 8 bottles of this sake in the Tokai region. It has an elegant, clear, sweet and delicious taste unique to daiginjyo, and the aluzo taste is refreshing.

This is my first Katsushikoma Jungin. It is clear, crisp, and deliciously spicy, just like Katsushikoma. It is the same 50% polished Junmai that we had before, but it does not have the sharpness of the Junmai, and the umami is elegant and soft.

Rare 2019BY Urakasumi is available here again this year. Aruzoe 40% polished, it has a refreshing feeling but also has a deep umami flavor. It has no sense of maturity or alcohol and is good as a mid-meal drink.

The first sip of the first sake. It is junmai (pure rice) with 50% polished rice. It has a clear and refreshing mouthfeel. After the gradual arrival of umami, it finishes crisp and clean with acidity. The crispness increases as the temperature rises. A simple and well-balanced food sake.
