When poured into a glass, a little more microbubbles adhere to the sake, and the color is clear with a slight yellow tinge.
The top aroma is gorgeous, with sweet aromas of caramel and ripe fruit.
On the palate, there is a gassy sensation, and the fine acidity spreads out with a sizzling sensation.
The palate has a juicy sweetness with impact and a strong, full-bodied flavor with a sense of depth. There is a slight astringency at the end.
The aftertaste is not harsh but feels a little sharp and refreshing.
It is delicious with the fullness of Oumachi's flavor as imagined.

This sake in particular is a Junmai Daiginjo-shu made with naturally grown Omachi rice, which is the pride of Okayama and a premium sake rice that has not been artificially crossbred. The fruity aroma and elegant flavor of naturally grown Omachi rice refined to 45% by President Toji Higashi Kikuchi's outstanding sake brewing skills are the result of his efforts.
We get a mouthful of this one as well.
It is fresh and clear on the palate. It has a juicy grape-like quality, but it is not showy at all and has a depth of flavor that can be used as a food wine.

It was a little dry in the mouth, but later on there was a hint of sweetness.
No gassiness. The acidity is mild. You can feel the umami of the rice.
It is easy to drink and half of the bottle was opened in no time. It is a good sake.
This sake is fresh, rich, fruity, and refreshing on the palate! I've had it several times and recommend it...New Year's Day 2023 also started with this sake.
