PB Sharaku🫧 at the liquor store. I held it down so it didn't fly away, but pon! and opened the bottle vigorously. The aroma is sour and rummy. When you drink it, it is shuwashuwa, sweet and tasty of rice, and refreshing like grapefruit. It has a koji-like flavor on the back end, but cuts off dry. This is delicious! The sweetness, acidity, and umami with a hint of koji and citrus spread gently and slowly in the foam. I don't feel much bitterness. I think that is one of the reasons why it is easy to drink. The next day, we drank the supernatant. It was still effervescent, and the soft sweetness of the rice gradually spread. A little bitterness appeared at the end. When I stirred it, it was a mildly creamy shwash! It looked delicious just by its appearance, but it was still delicious. I would like to try other PB nigoris when the timing is right.
