Rice polishing ratio 55%, alcohol content 16%, 100% Yamadanishiki
Purchased at a store directly selling sake. The brewery does not make seasonal sake, but it was listed as a current recommendation. I asked them why, and they told me it was because the timing of the seasoning was just right. Well, I had to try it as soon as I bought it. It's so stylish, I can't imagine what it tastes like from the label. It says, "Like the moon floating silently in the night sky, this sake is gentle, full, and elegant. The overall taste is fruity, with a slight acidity and a strong bitterness at the end to support the fullness of the flavor. It seems to be a combination of Yamada-Nishiki and Association No. 10 yeast, which means that the acidity is not sharp, so it is gentle.
1100
I bought a two-part bottle to try.
I couldn't wait until the evening and drank it during the day.
It has a strong spiciness with a hint of sweetness from the rice.
I thought it was slightly sweet, but it was very spicy for a sake with a sake strength of +1!
I should have had a glass with snacks while watching the moon.
Reducing the amount of water used for brewing "Jumizu Brewing
Rich aroma
Rich on the tongue
Deep and expansive
Long fade-out aftertaste
The richness is complex with umami, acidity and sweetness.
As the name implies
Like the wind that blows "phew" at the right moment
I want to drink plum wine!
That's what I thought and went all the way to Kaisei Town.
I'll be back!
I'll be back👍 I'll pick up a bottle for Umeshu (four-pack) and a bottle for Sandesi (as it is).
It's 20 degrees Celsius, so it's quite high in alcohol, so it's a bit of a kick.
It has a dry finish.
Keep the sweetness and umami to a minimum.
It seems to bring out the best of the fruit.
It will come back as a good fruit wine.
A bottle named with this thought in mind
I'm looking forward to the finished product.

My favorite Seto Shuzo😆.
When you drink it, you'll see
It has a fresh flavor with a hint of rice.
It has a fresh taste with the umami of rice,
It is very satisfying to drink.
The gorgeous aroma and flavor
and taste spreads all over your mouth.
It is a very nice sake 😆.
The bottle was opened after it was recommended to me that it was made from Aizan, which is a different rice from Yamada Nishiki's "Tsuki ga Kirei Desu desu desu. It is a delicious sake with a plump and tasty rice flavor. Whenever I visit this store, I always end up buying more than I budgeted for because of their kind and polite explanations.
It is a full-bodied sake in the wine sense, but as with the Setoichi series, it is a delicious sake with a robust flavor that spreads in the mouth.
The sake brewer recommended mixing it 1:1 with carbonated soda.
It is indeed easy to drink and delicious!
A sake that goes well with well-seasoned snacks.
I like ★★★★
