This sake is made by the newest sake brewery. It is refreshing and easy to drink, and I have the impression that it goes well with any meal and you will end up drinking a lot of it. I thought it was much lighter than Oshinshu. (If you drink it about 2 days later, you may feel some miscellaneous flavors in the middle of the bottle and the taste changes quite a bit, so I think it is very fast.)

Iraka Iraka Gin Kuro Birth Sake November 16, 2024 Kagataya Sake Shop First new sake tasting in 5 years. The first was a new brewery started by a toji from Oshinshu who took over a 350 year old brewery in Nagano Prefecture. It has a fruity aroma with a hint of sourness, a carbonated mouthfeel, and a refreshing finish. It has a modern taste, but the full-bodied flavor comes off too quickly and gives a thin impression. I feel that the quality of the sake is what you would expect from a modern sake, but at this price, I would not buy it.

Iraka Sake Brewery The aroma is like rum raisins. The flavor comes from the depths of the microbubbles. It is dry, and the bitterness tightens it up. The aroma is showy, but strangely enough, it does not disturb the meal. It's nice. It is delicious. One of the three most mysterious sake breweries in Nagano Prefecture (personal opinion). It was. Purchased at a sake brewery. A new sake brewery in Matsukawa Village. At the moment, the sales floor is open on Saturdays from 1pm to 5pm until the end of December. The "White" is a limited edition for Matsukawa Village. It is only available at the brewery and at Farm Ichiryoku, a five-minute drive away. Now you can get sakekasu like rice cakes (a lot). As it was the first product from the new brewery, I was very enthusiastic and checked the sales date as soon as the phone number was posted on the official website and made a reservation. I thought it was going to be more of a festival. But I was happy to talk a lot. Now I have a chance to be an old-timer. ☆☆☆☆☆ Birth sake 🎂 "Iraka Gin/Kuro (birth sake)" from the newly established Iraka Sake Brewery in Matsukawa, which took over the Sanchei Sake Brewery in Chikuhoku. It has a tangy sourness at first and sweetness in the aftertaste. Fruity and very tasty! Another attractive new addition to the Shinshu sake scene! I am very much looking forward to the future! This sake was a perfect birth sake to start off the brewery!

This is a product of the newest sake brewery in Japan, "Iraka Sake Brewery". The brewery invited a toji (master brewer) from Taishinshu to brew this sake. It has a ginjo aroma like grapes, and the moment you put it in your mouth, you feel a fresh, fizzy sensation. It has a juicy flavor as it passes down the throat, and a gentle lingering aftertaste. The specs are undisclosed, but the rice is locally grown under contract, so it is probably Hitogokochi. The level of quality is high, as is that of Yamazan, a new brewery also from Nagano. Both have a similar taste, but I have the impression that there are many parts that are more subdued than the freshness of the other one.
