From the nose, the wine has a fruity, fresh sweetness that continues through to the palate. Yet there is no heaviness from the taste to the aftertaste, and the wine is easy to drink like a white wine.
Kagami Special Junmai Nigori Nama-zake
The day started with nigori nama sake.
This is another brand made by a young toji at Ota Shuzo in Mie Prefecture.
It has a freshness only possible with nama sake, but the flavor of the rice is strongly expressed.
Goes well with today's obanzai.
Ingredients: Rice (domestic), Rice Koji (domestic)
Rice: 100% Kami no Ho (produced in Mie Prefecture)
Rice polishing ratio 60
Alcohol content: 16%.

The foaming is relatively mild, but the lees come up a little at a time, and it is nice that the foaming sensation continues all the way through.
The sweetness is moderate and clean.
The bottle was empty after about 30 minutes.
Kagami is a new brand created by the young toji of Ota Shuzo, the brewer of Hanagura.

It looks like they started it last fall.
The initial aroma is fruity and sweet with a hint of koji.
In the mouth, it has a moderate sweetness of rice, followed by a refreshing acidity and a slight bitter nigori taste.
Urasato's nigori is also delicious, but this one is quite well-balanced as well.
I think this one is more refreshing and light with a fresh sourness.
Chikara Touji is one of them, but this young Touji of Ota Sake Brewery might be one to watch out for.

Drinking it cold, it has a light fruity aroma. The label on the back of the bottle reads "melon-like aroma," but my personal impression on the palate is that it is closer to strawberry. The sugar content is 9.9%, which is in the dry category, but the umami is so strong that it feels sweet. There is not much acidity. There is a slight astringency. It is umami dry and to my liking.
Wakamatsuya.
It seems to be another brand of Hanzo.
It has a little lactic acidity, a little sweetness, a little umami, and a little acidity. It has a gaseous taste.
It is not too sweet and easy to drink.
We enjoyed it with New Year's Eve Kamo Nanban Soba.

Ota Shuzo is a sake brewery located in Iga City, Mie Prefecture, and was founded in 1892.
I want to make sake that I myself want to drink with my friends now, sake that I find interesting, without making any compromises. I want to make sake that I want to drink with my friends and colleagues, sake that I think is interesting, and sake that many people inside and outside of the prefecture will enjoy. With this in mind, we have newly launched "Kagami".
The first product of R5BY is a silky, dry, active nigori sake! We aimed for a smooth, sharp, and crisp taste!

Mild, slightly alcoholic aroma. The very gentle mouthfeel gives way to a slight sourness, and a smoky cedar-like aroma rises to the top. The second half of the bottle finishes with a delicious flavor that goes down your throat.
It reminds me a little of Jikin. It has a gentle mouthfeel, so it is easy to drink.

Jay & Nobby, it seems to have matured over the summer and turned into a fruit. It was brewed by Ota Shuzo as their flagship sake, and was a favorite of the master of the izakaya.
It was served cold with sashimi of yellowtail and lotus root taro stew as an accompaniment.
At first sip, I was surprised by the surprising balance of sweet, fresh, gorgeous, and refreshing!
The introduction on the back of the bottle said, "Reminiscent of a melon..." and indeed, you can feel the freshness and crispness of the melon.
This is delicious!

It goes well with demi-glace hamburgers and fried chicken. It is also perfect with sushi. It is a good match for foods that have a strong flavor or fatty taste.
