There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. ☆☆☆☆☆ It has sourness and a little bit of miscellaneous taste or bitterness, then comes the sweetness or umami of nigori. It has a bitter, youthful taste that goes well with spring wild vegetables. The sweetness that comes afterwards is also youthful.

Fusion of spiciness and mildness Cloudy white. Alcoholic aroma. The mellow mouthfeel gives way to a gentle sweetness and pungency. The umami gradually expands and finishes with mellowness. With seared tuna. The sweetness and umami of the tuna is well balanced with the spiciness of the sake. ★★★★

The aroma is surprisingly mild. The mouthfeel is smooth, milky and slightly sweet. Medium-bodied with a light aftertaste. The taste is still a little dry. Let it sit for a while. Postscript I left it overnight and the sweetness has increased. The gasiness has diminished a bit, but I prefer it this way!

This is a new brand by Ota Shuzo, the brewer of "Hanzo". This name has a bit of a connection to me, and I was very deeply moved by this sake. The taste is just as it says on the back label: fruity, refreshing, crisp, and easy to drink. I hope many people will drink it.
