Junmai Hi-ire
This is my favorite sake from Maruishi Brewery. It is my first time to drink something other than Ni-Usagi, so I am looking forward to it.
When the bottle is opened, there is a nice sound and a fizzy feeling.
On the palate, there is a sweetness like muscat and a refreshing acidity. A slight astringency in the back for a moment.
The aftertaste is delicious with a silky feeling followed by a whiff of sweetness 😋.
From the second day on, the juiciness becomes muted and mellow, but good 😆.
Maruishi Junmai Hi-ire
A well-balanced sake that is easy to drink and has both sweetness, fair acidity, and richness.
It is less sweet than Maruishi's Junmai Ginjo and has a more robust flavor, but if you like sweet sake, you will enjoy this a lot on its own.
Hard to know what the reason is for the limited distribution...but the rice seems to be different.
It's delicious, with a gentle sweetness and a bit of a mellow taste.
Maruishi Brewing Company, which usually serves us at Nisato, has a new brand "Maruishi" for the out-of-prefecture market. It is one of my favorite sake of the year.
When poured into a cup, it has small bubbles. The taste is a pleasant mix of soft sweetness and sourness. Although it is unfiltered, it has an alcohol content of 16%, making it easy on the palate and making it easy to finish.

The aroma is a classical type of light sweetness that appears softly.
The mouthfeel is soft and sweet, and the water quality is smooth and easy to drink.
The acidity that appears in the middle part of the bottle is assertive, but soft, so it is the type of wine that you can continue drinking without finishing it in one glass.
I haven't had Maruishi Brewing for a while, but I can feel the high quality again ☺️.

The origin of Maruishi comes from the fact that there was a round stone in the place where the company was founded. The company has been in business for 330 years. As the name implies, the sake is round, soft, and deep.
