Maruishi Brewery's "Maruishi" is one of my favorites. I opened a bottle of this sake, which is my favorite pure rice sake, unfiltered and unpasteurized.
The taste has a well-balanced flavor with a lactic acidity that is typical of a sake yeast yeast yeast, with a hint of sweetness and bitterness. It is rare to find an unfiltered, unfiltered, pure sake made from the traditional sake yeast, but this one is a taste that makes me want to drink it anytime.
It is a great partner for summer vegetables such as tomatoes and boiled corn.

While taking a walk to Beppu, I went to Kotani Sake Brewery, a 3-minute walk from Beppu Station. This is one of my three favorite liquor stores, along with Maruda Shuho and Kasagi Shuten, where I usually go.

Although it is a kijo-zake, the sweetness is not dull, and the light acidity and moderate bitterness are refreshing, and the sweetness of the rice stands out. I thought it was the most delicious kijo-zake I have ever tasted.
