I thought it might be a wine type wine because it "goes well with cheese and meat" 🍷.
It has a subtle sweetness, a clean flavor, and a nice sharpness 😋 It has a wine-like quality, but it still has a sake-like quality ❗I guess it's a good example of Niigata's beautifully light and dry taste 🎵.
I paired it with cheetara and yakitori and it was perfect 😉.
It's perfect with cheetara and yakitori 🆗 even with very fatty food ❗

One week after opening.
The acidity was strong right after opening the package, so it didn't seem too strange. When I drank it by itself, it became mellower and tastier than after opening the package (personal impression). I was attracted by the stylish name and the label, which says it is a sake like white wine. It is said to go well with meat and cheese, but unfortunately, today's entrée was grilled hokke and grilled vegetables.
The aroma is not very strong. It has a light taste with a strong acidity like white wine. I personally don't like the strong acidity, but it is a good wine to drink during a meal because you can feel the umami of rice in the latter half of the wine.

I've tried 1200 times to make a new sake that fits with modern food.
The 888th one was the best, hence the name.
The aroma is banana🍌-like, but with a hint of sourness.
Taste is sour as expected 😅.
It has a sake-like taste, but it's sourness is trying to make it more like a white wine.
Not the same as juicy sourness 💦.
It's kind of a deliberate sourness.
There is some sweetness, but not enough umami.
Sweet and sour but dry structure.
I wonder if this means it is adapted to the modern diet 🤔.
Taste is not rounded, a bit hard to drink for me personally, even though it's a bottle 😅.
