This delicious sake has a fruity aroma and juicy, light flavor.
The name comes from the fact that out of 1,200 test brewings, the 888th was the closest to the ideal sake.
I have had another brand, Chojamori, but this sake is more like the current trend in sake.
<Sour and sweet, even more intense and rich.
N-888 is the 888th sake that came closest to the ideal out of the 1,200 trials that Niigata Meikozo went through in order to create a sake that would suit the modern diet. 888th may seem a bit excessive, but 1,200 trials is an impressive number.
Now, let's drink!
The aroma is mild. There is a faint citrus-like acidity. White malted rice?
The mouthfeel is smooth, but then the acidity and sweetness come in! From there, it spreads out more slowly. This is rich. However, it disappears nicely at the end.
If I were to use a Ghibli analogy, it would be Dora's youth in "Laputa: Castle in the Sky. Although it does not appear directly in the movie, there is a portrait of Dora hanging in her room. It is also cute and cool. She looks powerful, energetic, strong, and yet cute. And she has style!
Satisfaction: ★★★★

Purchased on a one-day trip to Niigata in April!
The one we had at Ponshukan was junmai, but this one is a junmai daiginjo with a premium name. Expectations are only getting higher👍.
When I opened the bottle and poured it, the aroma was like red apples, and the depth of the aroma reminded me of apple nectar as well. It also has a pear-like flavor and is quite fruity 🍎.
The mouthfeel comes with a strong acidity and a moderate sweetness at the same time. It has a strawberry and lychee-like taste.
It tastes similar to Kirin's "Salty Lychee" and also has the flavor of a light white wine!
When you taste it, you can also taste the rice flavor from deep within, so it is both sake-like and wine-like.
This one has more sweetness than the Junmai, and it can be enjoyed either as a mid-meal drink or on its own!
The aftertaste is also wine-like due to the acidity. It has a good balance between drinkability and drinkability, and could even go as a summer sake!
Yuzawa's hot springs, Nagaoka's Ponshukan, Echino shu*kura and the Japan Sea at sunset.... No matter how many times you go, Niigata is always fun ✨.
I was a bit intrigued by the label, "Sake like wine," so I bought it.
The slightly acidic taste is like white wine for a moment. The aroma in the nose is very much sake-like, but not sweet. But it is not sweet. It is almost like a sake yeast yeast yeast, but without the peculiar taste. It seems to go well with white fish dishes.
If you are interested and have a chance, please give it a try.
Sake tasted at Ponshukan in Echigo Yuzawa part2
The heavy banana-like aroma coexists with a light lychee-like flavor, and the wine-like slurp makes it an easy match for any dish.
It is a high quality sake that overturns the image of Hokuriku sake.
I bought this because it was a regular seller at Yokado. The label looks like wine and not like sake, but the product description makes sense! It's a sake designed to go with any meal. I'm not sure what to make of it, but I'm sure it's a good idea. I'm sure you'll be happy to know that I'm not the only one who can't get enough of this 🎵.
"Wine?" Sake! I was attracted by the tags "Wine? So I bought some.
The aroma was sweet, but it still smelled like sake. When you put it in your mouth, the sourness rises quickly and you can feel the sweetness behind it. When the sourness disappears, there is a lingering aroma of rice. If you want to drink sake, this is an interesting drink.
My wife said she could drink this too. It would go well with pizza.
