Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

It tastes good with both Japanese and Western food. As the brewer says, it tastes like wine, but as a nationalist, I am somewhat dissatisfied because I feel like I am looking at a returnee with a foreign background.

N-888" was brewed 1,200 times through trial brewing in an attempt to create a sake that would fit the modern diet. Of these, the 888th was the closest to the ideal sake. It is made from 100% Koshitanrei sake rice, and is a premium draft "Nama-Daiginjo" Junmai-Daiginjo that is only available at a limited number of stores and in limited quantities. It has a light flavor like strawberry or lychee, and tastes like white wine. It is an interesting bottle.

Purchased at Hashimoto's in Koshigaya. 100% sake rice "Koshitanrei" is used. This premium draft Junmai Daiginjo is sold only at stores that carry it and in limited quantities. It is quite sour and acidic. The acidity mellows out when the glass is changed to a daiginjo glass. Sake with a clean taste and refreshing acidity. Purchased at a local supermarket. It has an unusual name, but it is because the 888th of 1200 attempts was a good one. It has a clear rice aroma and an apple-like fruity taste. The taste is light sweet but with a good strong and refreshing acidity. Like a green apple. The sweetness spreads when you chew it well in your mouth. I paired it with sushi, but it might have been better with fatty meat or something.
