Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

Purchased at Nagoya Sakae Mitsukoshi Depa. Refrigerated and manufactured in August 25 Slightly fruity mid-palate, with a sourness sensation in the second half of the bottle. Delicious. Sake that looks good in a glass I don't remember what it is, but I once had a sake that was marketed as "wine-like," and I got the impression that it was similar in direction. I was able to recognize again that wine-like sake = fruity and acidic sake. I was able to recognize it again!

What is 888? I found out that they made 1,200 prototypes and the 888th of them was the ideal flavor, so that's where they got the name. The taste is so sweet and aromatic that it makes you think it is a white wine. It has a sweetness and aroma that makes you think it is a white wine. ★★★☆☆ ¥1650 I dare to call it a rice wine rather than a sake. Sourness and mild malted rice aroma. Not too sweet and moderately dry. The price is reasonable, and I would like to buy it again when I visit Niigata!
