Isohajime no Omachi, which is not sold locally. The sharpness remains the same, but the depth of flavor is very strong. It has a different flavor from Yamadanishiki. Delicious, highly recommended.
Isoboast Daiginjo Suikyoka
Sake rice: 100% Yamadanishiki, Tojo Tokujo Tokujo rice, Polishing ratio: ALL 50%.
Like beautiful ripples spreading on the surface of clear water, echoing each other over and over again. This sake has such an elegant and gorgeous taste.
As the name suggests, it is a beautiful sake with a light and pleasant taste. The taste and aroma are not too assertive, and the acidity is moderate. After the throat sensation reminiscent of limpid water, it is fragrant with an elegant fruity aroma with a restrained flamboyance that is typical of Isobojimasake. A perfect food sake. Melon aroma with a soft touch of elegance. Convergence and lingering softness with moderate acidity.
The aroma is subdued, and the mouthfeel is chewy with the sweetness of rice and a firm alcohol taste, but the aftertaste is clean. Well-balanced production.
Alcohol 15%.

One of four bottles bought at Isobojama Brewery.
◉Cold sake
Dry and mellow. The aroma of ginjo is subtle, and the richness of the flavor spreads on the palate. The taste is rich and rich, with a mildness that warms the sake in the mouth.
It has a nice rich umami flavor that spreads out without any peculiarities.
I got oysters, so I had Isozumo.
It is still the best match.
It is dry and accepts all the smell of the sea. It's the best marriage, isn't it?
The next day, I bought some red clams and matched them with it, which was also the best fit.
I think the true value of Isobojiman lies in its honjozo (pure brewed sake).
Purchased 4 bottles at Isobojiman Brewery, one of them.
◉Cold sake
Dry and slightly mellow. It has a soft, umami flavor that spreads softly as it passes down the throat, with a refreshing finish.
It has a refreshing aftertaste and a gorgeous ginjo aroma.
◉Human body warming
The sake has a mild, mellow flavor.
Both dry wines would go well with seafood and seafood dishes.
Shizuoka oden would also be a good match.
