I'm so happy that I had a good morning today! Anyway, my wife and I went for a haircut today, and then we were invited to dinner at her parents' house. My mother-in-law is an excellent cook, and I look forward to it every time. This week, I was served Isojiman by Isojiman Sake Brewery in anticipation of my mother-in-law's cooking! This time it was an emerald bottle! I was told that Isojiman's Junmai Daiginjo was delicious when I first started working at Sake-no-wa, so I finally decided to try it! Let's have it right away! The first day First, the aroma. It has a fruity aroma. When you put it in your mouth, you will be impressed by its clean and refreshing taste. Not so much sweetness, but gentle bitterness, richness, and complexity. The second half has a slight umami taste. The overall impression is calm and clean. When paired with a meal, the umami is a little stronger, but the bitterness is also strong, making it more of a dry sake. The second day A little more fruity and sweet. The second day, I feel the spiciness, minerality, and richness are well balanced and mixed with the umami. I like the second day better, but it's still a strong dry and robust sake, so I felt it's a beautiful sake that can be enjoyed by drinking it slowly. My mother-in-law's cooking was so delicious that we ate too much that night!
