It was refreshing and full of carbonation!
As I expected, the beautiful sake quality typical of Nagano goes perfectly with the sparkling sake.
It is a perfect sake for a hot day, with little sweetness!

The full flavor of this unfiltered, unfiltered, unfiltered sake has been mellowed and calmed by the addition of heat-irrigation, which further enhances the delicate and refined taste of Yamadanishiki. It has a deep lingering aftertaste that spreads with a gentle aroma. A perfect food sake. Slightly citrusy aroma. The lingering aftertaste is a bit ennui.

I went on a trip to Nagano during my Obon vacation. The main purpose of the trip was to purchase Shinshu Kamerei from the Okazaki Sake Brewery in Ueda City. Yamazan Sake Brewery is a sake brewery in Ueda City that I stopped by on the way there. It was my first time to drink sake from the brewery. The brewery did not sell the sake at the storehouse, but I was informed of a special store where I could buy it. I was told by the store staff that this brewery had recently been revived and that Yamazan Sake was rapidly gaining popularity.
When the bottle was opened, it had a sweet aroma and was easy to drink with a sweet taste. I would like to try another sake made from a different rice.

Yamazan Sake Brewery was located in a field on the way to Matsumoto from downtown Ueda. I bought it at the nearby liquor store you mentioned. I heard that Yamazan is very popular these days and they sometimes limit the number of bottles sold.
I was lucky enough to buy Yamazan once and enjoyed it so much that I have always wanted to repeat it, but have never had the chance. When I went back to my parents' house, my nephew who came back at the same time bought it for me! 👏👍
The sparkling made it more effervescent, the fresh fruity muscat-like aroma was mild, and in addition to the sweetness and acidity, I could also taste the umami and bitterness of the rice. It was a delicious sake with a good balance of not only sweetness but also a refreshing second half. It is more like champagne than sake.

I started with a Junmai Ginjo of Yamadanishiki!
The aroma is fruity with apple-like acidity.
The taste is clean, fresh, and lush, typical of Nagano!
It is surprisingly rich, and may be somewhere between Shinshu Kamerei and Kawanakajima Genmai.
I knew it was good before drinking it, but when I tried it, it was even better!

I happened to have a bottle of Yamazan, which I had been curious about but had never had a chance to drink. The label is stylish. It is a Yamada-Nishiki, unfiltered, unpasteurized sake with delicious specs.
The first impression I had was of apples. The orangey citrus flavor was mixed in with the apple flavor, making it quite a refreshing bottle. The flavor is just right, not too thick or too thin. It is sweet, yet refreshing.
If it tastes this good, I would like to try another spec.
The label color is very fresh and promising.
The taste is light, sweet and refreshing.
It's good even while eating 😚.
It will be gone in no time 😚.
I want to enjoy many other kinds of Yamasan from now on 🙌🙌

Both courses are identical this time. Excellent performance. The aroma is gorgeous. White peaches✕green apples. The nose is fresh, even though it is fire-brewed. The convergence is dry and excellent as a food wine. Light. Very well-balanced. Yamazan has the potential to break out even further.
