First of all, the aroma.
Not much of an aroma.
When you put it in your mouth, you will feel the gorgeous sweetness.
You can also taste the gentle umami of the rice 🌾.
In the second half, sourness and gasiness come out, and it finishes smoothly with a slight astringent taste.
No pungency, bitterness, or unpleasant alcohol taste.
When mixed with corkage, the gorgeous sweetness stands out and the taste is mild.

The sweet and sourness is less than Sanke Nishiki, so I still prefer Sanke Nishiki😍.

We had a bottle of Yamazan's Junmai Ginjo Yamae Nishiki Unfiltered Nama-shu.
This is Yamazan's sake, one of my favorite Nagano sake that I continue to enjoy drinking.
I had just recently had a bottle of Yamadanishiki unrefined sake, and I couldn't forget how good it tasted, so I opened it again.
It has a strong sweetness and umami, like concentrated fruit juice, with a strong bitterness and a freshness that is typical of nama-nishiki sake. While it has a rich flavor, it also has a spicy and refreshing alcohol taste, so you can drink it without it becoming too heavy.
The overall flavor is strong, making it the most impactful and most memorable of all the Yamazan sakes we have had so far.

I was so happy to beat Brazil that I also opened a bottle of Yamazan!
Yamazan has a light, fruity image, but this one made with Kinmon-nishiki is quite robust.
I was a bit surprised by its low center of gravity and dense atmosphere.
Nevertheless, the fact that this sake does not tire one's palate is a true testament to its quality.
It is a dangerous one that can be enjoyed with strong-flavored snacks for a long time!

I'm the type of person who likes to eat my favorite foods in the second half of the year, so I left the Yamae Nishiki🌾 out of the two Yamasan 2-year aged varieties.

Chilli shuwa when you include it! The rice is sweet and rich, with a sizzling acidity that ends with a slight bitterness.

Fluffy sweetness and light bitterness - clean and tight. Come to think of it, it may not have the same Mori🌳 feeling (?) that I always get from Yamazan's Yamae Nishiki. I always feel that the forest🌳feeling(?) that I always feel in Yamazan🌳 Nishiki is not so much.
The unaged version is the same, but the Hitogokochi is a bit more sharp and bitter. Yamae Nishiki is softer and fluffier and sweeter.

I wanted to drink a nigori type sake for the first time in a while, so I opened a bottle of Yamazan's light nigori 😀.
This Usu-Nigori is a really thin nigori😇
There was no automatic stirring and I was able to take the supernatant and the mixture properly, but it doesn't look much different 🤣.
But the taste was quite different and surprising 🤣.
The supernatant sake has a strong umami and fruity taste, but the mixed sake has a more complex umami taste and tastes even better 😀.
In my opinion, Shinshu Kamerei is still my favorite Nagano sake, but Yamasan and Mikotsuru are competing for the second and third place.
Sake from Shinshu is really delicious after all 😀.
