The top aroma is fresh and juicy with hints of apple, blue melon peel, and cypress.
The mouthfeel has a slight richness.
The fresh blue melon aroma gives way to a full-bodied, fine-grained, milky sweet and savory taste. The aftertaste has a sharp grapefruit-like bitter acidity mixed with sweet umami, leaving a pleasant aftertaste.
Saki-ten is a fresh, full-bodied sake that can be drunk without hesitation. It is delicious.
From Takashima, where Furoisen is located, we received tsukudani (food boiled in soy sauce), a specialty of Lake Biwa.
There are many kinds of tsukudani, such as tsukudani of gori, tsukudani of ayu fish, and grilled skewers of moroko.
And when I rummaged through our refrigerator, there it was! Soma no tengu👺.

I first heard about it this year and was curious about it, and thanks to you, I was given the opportunity to try it 🍶.
The appearance is a light nigori color, about the same as a spring haze.
The nose has a pleasant ginjo aroma of refreshingly sweet red apples and moderately ripe green melon.
The mouthfeel is soft, with a deep sweet umami flavor that quickly rises to the tip of the tongue, followed by a crisp acidity that includes a firm acidity.
From there, the sweet umami with a hint of nigori (nigori) flavor and a gorgeous spread of ginjo aroma are felt while the acidity passes from the back of the throat to the nose to finish.
The lingering aftertaste leaves a bitter aftertaste on the tongue.

As the temperature rises, the nigori flavor comes to the fore, and the rich, thick, sweet umami is mixed with the acidity and slight bitterness of the koji, and the acidity becomes more gentle, which is also good.
As is typical of muddy sake, the last cup is thicker and richer in texture, the sweet and umami taste is even thicker and richer, and the acidity is pleasant with a hint of nigori, making it a blissful sake. ☺️

I had a drink at an izakaya at the end of February and thought it was the best sake I had this year! I was able to buy a bottle of sake that I thought was the best I've had this year after drinking it at a pub around the end of February ✨✨ so I'll take my time at home 👺.
First, it was chilled and served in a wine glass.
The entrance smells of freshly milled rice like Kamishinko, and a gentle sweet aroma like cotton candy.
The soft and sweet rice flavor spreads in the mouth in a beautiful volume in a clear mouthful ✨✨The acidity is also soft, yet firm and thick. This is still wonderful ✨✨.
The finish is gentle, with a slight bitterness coming in at the end.
It's still so delicious 🍶🍶🍶.
Sweet, gentle, soft and reassuring, with a solid and trustworthy structure throughout. This body is nice for a draft ✨I think it will be even better after about 3 days of aging now ✨.
Next, we warmed it up.
I warmed it up to about 45℃ while taking in the aroma in a hot water bath. I warmed it up a little beforehand in a tasting cup. The result was about 40 degrees (maybe).
At the entrance, the aroma is like that of a candy that reminds you of a lot of sweetness, overlapped with the acidic aroma of fermented yogurt. The aroma of alcohol volume is also present.
In the mouth, the warmed and even softer and gentler sweetness of the rice is combined with the thick acidity to spread through the mouth ✨✨Delicious 🍶.
