This sake turned my biased preconceived notion that I usually drink sake from Fukushima, and for some reason I am not fond of sake from Nada or Fushimi, upside down. It is refreshing and has a low acidity. It has a gentle taste with sweetness softly coming to the nose.
Hyogo is the sake of Nada - Mikagego.
Daikoku Masamune is a famous sake in Nada, but this is the first time for me to drink it.
It has an elegant white peach flavor.
Or pear-like? The refreshing acidity is pleasant.
The spiciness that comes in after the acidity is gentle and pleasant to the palate. It is like clouds fluttering in the autumn sky.
Refreshing and elegant all the way through.

Almost colorless and transparent. The full-bodied aroma reminds one of rice, white dumplings, and apples. There is also a faint odor of alcohol. The aroma is strong. Smooth mouthfeel. Soon after, there is a sharp bitterness. Sourness drifts in gradually. There are hints of apple. It leaves an astringent aftertaste, but it is sharp and has a short aftertaste. Sake with a fragrance.
Light and discreet tropical fruit aroma. The gap between the soft and deep umami and the sharpness from the strong alcohol is excellent.
When paired with black edamame (green soybeans), which are on sale for the first time, the soft umami of both, the slightly lingering greenness, and the mineral and graininess are best matched to give it a grilled corn-like nuance.

I came for the marriage of PLUS9 and sashimi, and the horse sashimi was...irresistible... 🥰The second glass of Daikoku Masamune was dry 🍶✨ with a umami taste that preceded the horse sashimi without fighting with it, giving it an unceasing taste. It gives you the feeling of listening to the most exciting orchestral bolero 🎶.
Contrary to the image of the name, it is a rather showy type of sake.
It has a rich aroma, and it might be better served cold. It would be good with sushi.

Slightly young fruit aroma is discreet. After a short pause, a soft sweetness like that of cotton candy and a delicious flavor like that of candy cane stick to the palate. It can be served in a mojito with mint on the top, or with stir-fried green vegetables.

The light aroma is modest, with a full-bodied sweetness and umami. The taste is not cloying, and the acidity is refreshing. The balance is like that of soup with sudachi (a type of citrus fruit) squeezed into it. I really like the balance of the light and delicious taste, which is full but not overstretched.

Perhaps it is because I am used to summer sake, but after a long time, I find that 18% alcohol by volume sake is too strong. I think I should drink it on the rocks. I think it would be best to drink it at room temperature and add water to bring out the flavor, but at this temperature, I think it would taste better on the rocks.
It has a yellowish appearance and a slightly aged feel, but not as dull as an old sake. The umami spreads slowly. It is a hiyaoroshi with a sense of maturity.
Junmai Ginjo-shu by Daikoku Masamune
I guess it's an orthodox sake using Yume Nishiki from Hyogo Prefecture.
As the label on the back says, it's perfect as a food sake.

It said something about it being aged, so I wonder if it's hiya oroshi?
I was allowed to sample it at Yamamoto Sake Shop.
First visit since 2019 before Corona. The store is very proactive in letting us sample their sake and they usually let us drink out of the sealed bottle of their stock. It's a local place but I don't go there often, so if it were closer, I'd go there often.
They are not on SNS at the moment, so I'll write down the brands they carry. Echino Kanmei, Yone Hyakudara, Morinokura, Dokurakura, Tomikyucho, Tocho, Shirataka, Daikoku Masamune, Sakeyumu (Eikun's limited brand. PB of a liquor store in Kyoto)
Echino Kanbai also has a selection of expensive brands that you would have to go to a department store to find, if you like. I personally recommend the regular and honjozo brands of Yone Hyakutawara and Tocho.
The store opens early in the morning and is open on Sundays, so if you are in the area, please stop by.
I found it to be fruity and sweeter than I expected.
It is a twice-brewed sake, but I felt it was carefully brewed and fresh.
It was delicious, but I was curious about Tomikunaga's Yatancho, so I bought that one.
The official account of Daikoku Masamune said that twice-hiked does not meet the definition of hiyaoroshi. I guess it's not hiyaoroshi unless it's precisely packed fresh.
I apologize for not hesitating to open a bottle of sake that cost 2,200 yen and let me sample it. They let me seal off another sake and taste it. It was like that the last time I went there.
