Ryoseki Shuzo's "Hanayu Junmai Ginjo Omachi Hi-ire
Ryoseki Shuzo Co. is a sake brewery in Akita Prefecture with an old history dating back to 1874.
Hanamura is a sake created through a technical exchange from President Takagi of Takagi Shuzo, famous for its popular Yamagata Prefecture brand "Jyushiyo.
The extremely high quality of the sake has attracted much attention.
The aroma is reminiscent of ripe fruits such as melon and mango, and the taste is full, thick, and rich, typical of Omachi rice.
After swallowing, the sake has an umami "return taste," which is indicative of the high level of its technical skill.

Rikuwada, the rice used to make this sake, was a variety I had never heard of before.
Upon research, I found out that it is a rare sake rice bred by Mr. Takagi, the brewer of "Jyushidai" and that there are only a few farmers who grow it and its quantity is very small.
Furthermore, according to online information, only Hana Yuu is currently using this rice, which piqued my interest, so I made a reservation and purchased it.
It was smooth (somewhere between smooth and smooth), sweet (-4.9 sake on the sake store's page I looked at), and had a rich umami flavor that I really liked.
Upon closer inspection, I was also surprised to see that it was junmai, not junmai ginjo. It had a beautiful texture with no cloying or roughness,
I also thought it was wonderful that it had a nice sharp aftertaste despite being sweet and umami.
I'm in a resting state due to fever 😷.
The temperature has calmed down from 39℃ yesterday to 37℃ today, so I can now afford to touch my phone.
This time it's Sake Mirai from Hanamup!

The top aroma is sweet and juicy muscat.
The texture is slightly thickened.
In the mouth, it explodes in the order of rich sweetness and umami.
The acidity, bitterness, and alcohol taste follow this in a well-balanced and light manner. The sweetness and umami lasts until the end, but the bitter alcohol acidity that comes in the middle decrescendos the sweetness and umami, leaving a lingering, mild aftertaste.
This is delicious. It is best when drunk slowly on its own. But it also has a sense of balance, so it can be served with food as well.
