A well-balanced junmai ginjo-shu that is both rich in flavor and crisp.
The light and cool flavor spreads smoothly in the mouth, followed gently by a pleasant aftertaste.

Junmai Ginjo-Shu Mukuin- Hatsu Shibori Nama-nihonshu
As the name suggests, it is bottled as it is freshly pressed, so it is not watered down, not heated, and only filtered, so it has a fresh, slightly sweet and sour taste.
It is made from 100% Yuyamanishiki produced in Toyama Prefecture, and is only available from December every year.
Summer sake. It is refreshing and easy to drink. It was very good as a refreshing summer sake to be paired with summer dishes such as takikomi and sashimi.

The spicy miso was too spicy for me 😅 I've only had special miso so I want to try a variety 🤤.
