This sake was stored in Kurobe Dam in September 2022 and taken out of the dam in June of this year. I bought a bottle of Gen no Taki and a bottle of Sanjoraku, and enjoyed the Gen no Taki with friends early, but I opened a bottle of Sanjoraku at home.
It was delicious. I could tell that it had not only become mellow, but had also quietly matured like a whiskey. Some stores seem to have sold out of it after the Bon Festival, but I will go looking for more to replenish my stock 😄.
When I opened the bottle, the lid popped to the ceiling! LOL!
And yet it was not as acidic as I expected. I was like, "What's that?
The taste is a little strong with a little bit of umami. But it doesn't leave too much aftertaste.

It is a sake designed with consideration of what is typical of Sanshoraku. It is a soft-tasting sake with a firm framework of the original Japanese sake flavor.
