Morishima, using the flagship model "Omachi", is brewed with the 14 yeast (Kanazawa yeast) that the brewery has been consciously using since the "Taikan" brand.
The Omachi rice from Okayama Prefecture, the home of Omachi rice, is used to give this Junmai Daiginjo its sublime ginjo aroma.

The difference in flavor as the temperature changes, from chilled to heated, is another way to enjoy koshu.

Sake Mirai is a new sake rice created in 1999 by Tatsugoro Takagi, the 14th generation brewer of Takagi Sake Brewery, over a period of 18 years. The rice is polished to a Junmai Daiginjo-class 50%!

Rolling my carry-on case from Tochomae station on my way home from a business trip, I headed for the restaurant!
The restaurant is located behind the Park Hyatt Tokyo, which I used to use for business entertainment in the past.
The three of us arrived on time and the party began!
The manager asked us what kind of sake we liked. He asked us if there was anything we wanted to include in our drinks.
One of us was from Nara Prefecture and the other lived in Kanagawa Prefecture, so I asked him to put in some of their sake and Shinmasa!
He suggested we start with Wakayama, and this one was offered to us, Chokyu Cho-Kyu Cho-Kara +18!
