ひるぺこ
This time it is Reiho from Tanzawa-yama.
This sake is from Kanagawa Prefecture.
It is an aged Junmai sake made with Awa Yamadanishiki and aged in tanks for over a year.
It is served at room temperature.
It has a pale yellow color.
The top aroma is a rounded mature aroma with a gentle fragrance.
The aroma alone is intoxicating and beautifully mature.
And when you take a sip
In the second half, the taste is sharp with a mild bitterness and a lingering aroma of matured aroma from the acidity with a flavorful outline.
Then, when heated to hot, the flavor of the sake is refined,
The flavor of the sake is neatly arranged,
The taste of soup stock-like umami and bitterness is pleasantly familiar to the body.
It may be because it's been a while since I've had a matured sake, but it's a taste that will penetrate your body. ♨️
I wanted to pair this with Yaki-Fujima from Wagashi Kaorufu in Sendagi.
The cake is light and fluffy, with azuki beans and dried figs in it, and the rum is juicy.
When served chilled, the rum is too strong and the cake is too assertive.
But when served warm, the sweet and complex aroma of the rum soaking into the cake and the moderate graininess of the azuki beans are complemented by the bittersweet flavor of the Tanzawayama. Ummm 😋
