Living in the Hokuriku area, we don't often see sake from Okayama Prefecture.
This is the first time I have had this sake, and it is extremely tasty and umami. The slight acidity gives it a nice flavor. I would like to repeat it, but they don't sell it....

It is a clear amber color. I bought it at the store, and it was made in December 2018, making it a completely old wine. It tastes like Shaoxing wine with a hint of burnt caramel.

I was quite wary of opening it, but it was not an explosive sake. The supernatant was dry and crisp with a shwashiness, and when mixed in, the oli was not so thick as to be nigori, but added a rounded depth of flavor that was delicious, recommended.
A refreshing, light aroma, smooth mouthfeel, round ripe rice flavor, and gentle acidity and bitterness on the back palate, this Okayama sake is a perfect complement to food 🍶.
