Omachi City is blessed with beautiful rivers, and its tap water comes from four water systems: the Yazawa, Iyari-ri, Shirasawa, and Kamishirasawa water systems.
For example, in the Omachi shopping district, the water used by the stores on the east side and the west side is different.
On the east side, the water is called "Onna-no-Shimizu," which comes from a spring in Iyari-ri, a 900-meter-high mountain, and on the west side, "Otoko-no-Shimizu," which comes from a spring in Kamishirasawa (upstream of the river at the entrance of Kurobe Dam) in the Alps at an elevation of nearly 3,000 meters, and flows to each tap.

As the name suggests, it is dark and delicious.
This sake is as good as the local cuisine of Nagano Prefecture, which is rich in flavor.

Very slight effervescence. A leafy aroma that is hard to describe. Sweet taste. Flows like water from the mouth to the throat. Nice.
I bought this at a brewery opening event last week. Don't tell anyone that the specs are very similar to the blue one of a certain sake. Probably a limited label for the Kurabiraki event.
It goes super well with the Chinese dumplings I bought at a Chinese restaurant in front of the station during the event! It refreshes the palate while still retaining some sweetness! Maybe they designed it to be so?
This may be my personal favorite of the event.
It has a clear, floral flavor that spreads out and a fine feel that quickly recedes. The image of the name "Hakuba Nishiki" and the mouthfeel are well matched.

The charm of this event is that you can drink as much as you want as long as you pay the entry fee. We've been waiting for this!
This year, there were fewer snacks and no (dreaded) hot sake corner.

This is a line where local people get on and off quite often. It is a local train line that is very active.
Hakuba Nishiki is also a delicious sake.
There is no bitterness, and the sweetness has a sourness to it, making it a crisp yet umami sake.
When drunk with deer carpaccio, it washes away the strong and fatty taste of the carpaccio from your mouth and adds the taste of the carpaccio to the sake.
This is the very best part of the drinking experience.
