Ryoseki Shuzo's Hana Yuu or Suitama is one of my favorite breweries. ☝️ This is the first "back" Suitama I have come across 🤩.
I have nothing but high expectations!
I read the concept of this sake and read articles and reports that it is "dry with a mellow aroma and umami flavor", but was it really...?
The aroma after opening the bottle is very fruity😍I thought it would taste more like honeyed apples than melon🍈 on the palate, but then the spiciness gradually rushes in 🤩 of course the aftertaste goes from deliciously spicy to sharp! The aftertaste was also apple and green apple-like!
I think the taste is not rich and mellow, but light and dry, with umami and dryness coexisting in the same taste.

The regular Suitama is delicious, but the Ura-Suitama is also delicious! That's what I'm talking about, Ryoseki Shuzo 😘.

Yamada Farm, a local farmer in Akita Yuzawa, located in the Yamada district of Yuzawa City, Akita Prefecture, produces Yamada Nishiki every year.
This junmai ginjo is brewed with Yamada-Nishiki, which they dared to grow in a cold region.
The mild aroma and moist flavor in the mouth make this sake feel like a jewel "Suidama".

I bought this sake because it was a limited edition sake.
When I drank it, I found that it has a completely different flavor from the original Suitama.
It doesn't have the sweetness of the original, but has a grain-like aroma. It has a grain-like aroma, but the umami taste is still present in the aftertaste.
It is truly the reverse side of Suitama.

The fourth glass was my first Suitama 😍and my first sake with the name "Ura" on it 😍.
I thought it would be dry so I had it with sardine isobe maki (sardine sashimi) 🤤I love sardine sashimi so I always order it when I find it 😁.
It has a beautiful mouthfeel with a fruity aroma, refreshing flavor, and a clean spiciness that I can't get enough of ✨.
I feel like I'm on my 4th cup and it's a palate freshener.
I love Ryoseki Shuzo's elegant palate and often enjoy Hanayuup😍It was the first Junmai Daiginjo under the brand name and the first time I had the Suitama brand.
🌻🌻This was the last brand to be released before the summer season😃 🥂🥂It has a pleasant fruity aroma when you put the glass close, the mouthfeel is balanced and sharp and very delicious💗I drank too much of this 🤗I don't know the characteristics of the sake rice, Kame no O😅💦I heard they also released Jun Dai Yamadanishiki, I want to try it! 🫶💕

The brewer calls it a mellow dry sake, and while it has a fruity aroma, the impression is of a sake with a strong sense of rice minerality.
I compared it with Hana Yuu's Jun Dai, and the difference was striking.
