Rich and mellow! Sweet, spicy, acidic, bitter, and umami 🤣.
A faint aroma of fermentation is also present.
The whole sake is very strong and you can enjoy it a lot with a small amount 😁It's for evening drinking. ❗️
The brewery is located in the neighborhood of Ukimido on the shores of Lake Biwa, and has become a hot topic because it is brewed by three male brothers. I remember that I was treated politely when I visited there before.
The sake was a summer-only ginjo-shu. It has a gorgeous ginjo aroma and a refreshing taste.
It is a must have in the summer. It is a bottle that you want to have on hand during the summer.
I heard that there are quite a few dealers that carry them.

The aroma is a modest but heavy ginjo aroma, not refreshing. I don't feel ethyl caproate as if it is really 1801. No, there may be a slight apple aroma when you are aware of it... but that's about it.
The taste is balanced and has a certain amount of umami.
It has a bottom that is hard to believe that the alcohol is 14℃, and there is a chocolate-like nuance.
