I drank it over several days, which was unusual for me. As the days went by, the initial mouthfeel became thicker and thicker, and it was delicious. The aftertaste was mellow and satisfying.
It is fire-brewed, so there was no major change in taste, but it was quite an excellent bottle.

Elegant pear-like aroma
Neither heavy nor light.
Well-balanced umami and very easy to drink.
The volume of the sake is slightly reduced, so it is light and easy to drink.
We served it with white fish sashimi.

There is not much standing aroma. It is clean with a gentle flavor of rice and fruity acidity.
It has a strong acidity when drunk by itself, but with a meal, it becomes a good wine.
It is easier to drink at a slightly higher temperature than at a cooler temperature because the acidity is less pronounced!
