Of all the sake breweries in Saijo, Kamerei Brewery is the only one that I personally like.
This is a sake that is only distributed to local liquor stores.
When you open the bottle, you'll find a nice fruity aroma 🍎.
It has a nice fruity aroma when you open the bottle 🍎, a bit of the "nama-shu" (freshness), but the sweetness is not that strong, so it's more for a mid-meal drink.
Kamerei is a brewery that originally specializes in brewing dry middle-class sake, so the fizzy feeling is great for easy drinking 😀.
Considering the price of 890 yen/500ml, I wish it didn't have to be local only 😌....

This is Junmai Ginjyo Hattanishiki, a sake limited to the Saijo Sake Festival.
It was a cup with a characteristic flavor and spiciness.
It tasted like it should be drunk warmed.

After Fukubito, we went to Kamerei Sake Brewery for the first time.
The entrance to the brewery has a very cultural festival feel to it.
Is it sweeter than Fukubito's Daiginjo-Masushu?
Personally, I prefer the taste of Kamerei.

Saijo Sake Festival.
I tasted a daiginjo 🍶.
It has a strong sweetness and high fragrance 😤.
Muscat sweetness, not too sweet, not too cloying, perfectly balanced. As expected of a daiginjo.
It was an adventure to get to the tasting zone because of the huge crowd 🤣.
When I come to Hidazo, the first thing I usually do is to have a "tsukuri-zakari" and a "kame-ling".
It is a mildly umami-guchi dry sake that goes perfectly with the excellent zakizushi.
The dryness of the sake is a bit assertive, but the balance between the umami and the sake is excellent, and it goes best with sashimi.
Hidazo's sake lineup has a lot of sweet and fancy sake, but I wish they would increase the number of honest sake like this.
