Kamerei Mannen is brewed by Kamerei Shuzo in Saijo, the sake capital of Hiroshima.
It is a junmai daiginjo-shu brewed with a luxurious polishing ratio of 45%.
Shinpaku is a white, cloudy area that appears in the center of the rice, where the mycelium of koji mold enters the rice and leads to smooth fermentation.
The shape of the core white varies, but Yamada-Nishiki is the most commonly known for its linear core white. It is a sign of excellent sake rice.
The appearance is almost transparent silver.
The aroma is fruity, soft and sweet.
The fruity ginjo aroma is very soft and gentle, with hints of ripe melon and banana sweetness.
The aroma of rice is modest and elegant, about the same level as that of Kamishinko.
The mouthfeel is soft and smooth.
