The best autumn sake of Collage is the pride of Collage, and it is my personal favorite autumn sake!
It has a melon and banana-like aroma on the top of the nose, and when you put it in your mouth, it has a rounded and rounded texture with a broad spread of umami and a beautiful acidity. The crisp aftertaste is a specialty of Hazhu Honor.
The exquisite balance of mellowness and crispness is different from other chilled grated sake. We enjoyed it again this year!

Slight aroma, smooth attack. The taste is sweet, sour, and delicious. It goes in smoothly and has a good sharpness.
Goes well with the fluffy texture of the accompanying milt tempura.
I went to the brewery, but they didn't sell it, and when I went to the store, I couldn't buy it because of the point system, but I found it at Hasegawa in Tokyo Station, where I stopped by on a whim.

Sharaku
MIYAIZUMI
In Aizu, there is a famous sake brewing family that has been in business for 400 years, from which the Miyaisumi and Higashiyama families split off.
When the Higashiyama brewery, which made Sharaku (classic Sharaku), went out of business, Yoshihiro Miyamori, the current president of his relative Miyazumi Meizumi Brewery, took over the brand name "Collage" and created a completely new concept, which is now highly acclaimed.
The label of classic Sharaku was Ichikawa Ebizo by Toshusai Sharaku, but now it is only letters.
As a side note, I personally believe that the name "Sharaku" comes from the Japanese word "pun" (pun).
