Ryujinmaru after a long time
I didn't have a chance to drink it because it's a bottle, so it's been aged for 3 years now.
It is a 50% Yamada-Nishiki polished unfiltered unpasteurized sake.
The alcohol content is 18%, which is higher than the trend.
The aroma is mild ginjo with a hint of rice and grains.
It seems to be a classic sake, but it is more beautiful than ordinary sake.
Maybe it is because it is made by hanging it in a bag.
The taste is full, strong, sweet and umami.
And I don't know if it's because it's unfiltered raw or because it's aged, but it's very drinkable and delicious, accented with a rich cocoa and malty flavor.
What is particularly impressive is that it combines a rich taste with a light mouthfeel.
You don't notice the 18% alcohol content, and the aftertaste is refreshing and very easy to drink!
I don't often drink classic type sake, but I think it's a very good and well-made sake.

The first aroma was of grain-like alcohol and chocolate.
On the palate, it has a subtle sweetness like brown sugar and a savory bitterness. The alcohol content of 18 degrees is powerful.
I do not dislike it.
On the second day, the alcohol smell settles down,
The mild sweetness and umami are balanced by the bitterness. I was able to enjoy it as a food sake.
It went well with simmered kampachi (yellowtail).

It has a glossy, mellow flavor with a rich brown sugar or honey-like sweetness. The rich taste of rice is powerful and mellow. There is a slight bitterness behind the umami. I would like to drink this sake in small sips.
The strong peculiar taste of junmai sake and junmai ginjo-shu is subdued and clear, but it has a strong, rich flavor, so I enjoy a small amount to finish off after a meal.

Ryujinmaru Junmai Ginjyo Unfiltered Nama-shu, bag-hung. Aged in house for about 3 years in a special and ice-cooled cellar. It has a mild grain aroma with soft cemedine and iso-scent. The strong acidity spreads smoothly over the smooth mouthfeel, followed by a soft sweetness and umami. The lingering, nutty, dry taste gives it depth and dimension. I love this flavor, and it would be delicious in the sun or lukewarm.
The first sensation is a fresh, fruity aroma.
Sweet aromas of melon and apple tickle the nostrils and make you feel as if you are strolling through a summer fruit orchard.

I often find over 10,000 bottles of 4-goupe at the store I sometimes go to, but I found a reasonably priced one that was rare, so I bought it 💸.
Dry. Aroma with a graininess. The back of my throat gets squeaky before the sweetness spreads 😆.
