If you want to pair dried fish from Noto with sake, you must drink sake from Ishikawa! So I ran to a local liquor store. This is the sake I encountered there. Perhaps it was the lack of expectation, but it was a very tasty sake with a refreshing taste that did not disturb the meal with its melon aroma and sweetness.
There are still many delicious sakes out there that I have never tried.
At a get-together at work, I was given one of the sakes brought by a person who has a wife who is a sake connoisseur. A new sake of the year. Fresh and fruity with a pear taste. Delicious.

A very balanced sake with a nice, clean taste, but with a hint of umami.
◉Kiku no Shizuku Junmai Ginjo
Made with Hyakumangoku No Shiro. A little spicy and refreshing.
Hyakumangoku No Shiro Junmai Daiginjo
A fruity but slightly sweet sake with a hint of bitterness.
It is a good choice for a mid-meal drink, rather than a sweet sake.
