I personally like the "Hakusan" series of sake breweries. I bought it because I came across the first shibori I didn't expect...!
When I opened the bottle and poured it, the aroma had a cemedine-like flavor. It has been a while since I have had this type of standing aroma.
The mouthfeel is smooth and refreshing, but immediately afterwards there is a direct attack of astringency! You can feel its strong presence.
