Today is Setsubun. I was walking along the shopping street last night without drinking when I saw some tasty looking ehoumaki at a fish shop. I was attracted by the freshly rolled rolls and bought one. We ate it quietly with the family at night and drank some of this sake. It's good, too.
I heard that it was stocked in a hurry as a relief for Ishikawa, which was hit by the earthquake.
Powerful taste. It comes with a sharp taste.
The acidity comes from the robust umami.
The fruity grape-like taste follows softly.
The richness of the rice comes later.

This brewery is located in Hakusan City, Ishikawa Prefecture.
The price of a four-part bottle is very reasonable,

It has a gorgeous aroma and a full, deep flavor.
Recommended to drink cold (room temperature).

I didn't know it existed until last year, and then I found out that Manzairaku is a joint brewery with Ishikawa in my hometown of Fukui, so I went to the store to get some 😁.
I went to the store and got it!
Manzairaku Tachiharu Asa Shibori Junmai Ginjo Nama Genjyo
Again, we drank it in a thin sake cup and a glass with a Masu ✨.

The aroma is fresh and somewhat reminiscent of green apples, and the mouthfeel is full of umami, followed by a fresh sweetness, then a sharp finish, a lingering aftertaste, and bitterness that lingers in the back of the throat.

The aroma of apples is stronger than that of the boar's mouth, and the fresh sweetness is followed by a mild aftertaste.

For the entrée, we chose kanpachi sashimi and charcoal-grilled duck, as duck is in season in Kaga, Ishikawa at this time of year.
This is a side dish, not Kaga duck.
The fresh flavor with a mild aftertaste goes well with the fatty taste of the duck 😁.
By the way, the lineup at the fish shop has been lonely lately, and the fish that used to be available here and there are now all farm-raised.
I wonder if the sea is too rough to fish or if the earthquake in Noto has affected them 🤔.
