17% alcohol by volume. It was served cold 🍶 with a nice umami and acidity at first, followed by a moderate dryness. I had it today with white chocolate as a souvenir, and it was quite good! I felt that other dishes with stronger flavors would complement this sake better 😊. I think it would go well with teriyaki yellowtail this time of year 🤤. I have an early morning tomorrow, so that's about it for today.

After the wife and kids went to bed, we had this sake and snacks that we bought at the supermarket today. It is an autumn sake hiyaoroshi, so it is a little late in the season 😅, but it has a gentle aroma that is not too assertive, and the lingering umami and sweetness are mild, making me feel like it will let me slowly drift off to sleep afterwards (lol). Also, this is the first time for me to drink "Asakai", and since it is hiyaoroshi, this is the first time I have met this figure, which would have been mellowed by the fire-refining process. How was the roughness when it was still new sake? It was also fun to drink it while thinking of the "Asakai" of my youth. This is the story of my encounter with "Asakai" that has grown up and become more square. ⭐︎

We had this at a standing bar during the day. It is the same restaurant as the one I posted yesterday, and is the proprietress's sake of choice! It is cloudy, slightly effervescent, and has a sharp aftertaste. The dry taste combined with the slight effervescence gives the sake a crisp aftertaste, or perhaps it resets your mouth after drinking it. The normal dry, sharp sake is as if you are being taught by a seasoned veteran, while this dry, slightly sparkling sake has a refreshing feeling, as if you are being tightened up by a competent young senior. I know this is a strange analogy, but if you are interested, I hope you get a taste of this sensation!

With oden at a standing bar in Onomichi. Chosen by the proprietress who searches all over the country for sake. Sour and sweet sake with a short aftertaste and an early time frame. The sake was delicious on its own😊. The fact that they use 100% Hitanishiki sake rice is also . Interesting regional characteristics. I would like to purchase and drink it separately.

With oyster shigureni which my wife made. Oysters are devastated in Hiroshima this year, but that doesn't mean we can't eat them this time of year 😅. It is a well-balanced sake, medium-hot and fruity. I thought it would go well with a slightly darker dish like shigure-ni-nimono with oysters. I think it works as a match because the long lingering flavor of the oyster on the palate and the lingering flavor of the sake seem to be in tune with each other. Both the oysters and sake seemed to disappear quickly, so I made an effort to taste and drink and eat (laugh).

It was in a nearby supermarket (was there any left?). I was a little hungry at night, so I bought it with a frozen grilled rice ball. I was hungry at night, so I had it with frozen yaki-onigiri (grilled rice balls). I served grilled rice balls with it, but the sake's umami flavor was too much for the soy sauce on the rice balls, so it may not have been a good match. I would like to try it again to see what kind of flavor it can match! The sake is simply delicious on its own, and I thought it had a distinct personality.

It is fermented with Hakuto yeast, which makes it an unusual sake with a sour taste. However, at only 8.5%, it is not a sake. Even those who do not like sake can enjoy it. It is described as a good aperitif, so it might be positioned as such a drink. It is better than sake that interferes with food, and I liked it a lot! It also tastes better chilled.
