National Sake Fair 2025 in Osaka㊱ Saitama Prefecture Booth 10 The sixth generation master brewer, Hideyuki Takizawa, went to France to study Champagne. ◉Kikuizumi Hitosuji Sparkling Junmai Sake The second fermentation in the bottle is made using the neck freeze method, which is a Champagne process where the bottle is turned upside down to collect the lees and only that part of the bottle is frozen. It didn't seem too sparkling, but it had a sweetness and a wacky aftertaste. Saitama has two rivers flowing through it. The one near the Arakawa River is soft to medium soft water, the one near the Tone River is medium soft to hard water, and the mountain side has a limestone mountain called Mt.
