Iyari-ri Yamahai Junmai Harasake Hiyoroshi.
This is the fourth Hiyoroshi sake of the season.
It is served cold.
The color is a deep yellow, which gives a sense of maturity.
The aroma is slightly sweet and sour.
The mouthfeel has a characteristic sourness, perhaps because it is Yamahai, and both sourness and umami spread at once, with a good sense of maturity that is tinged with the maturity of hiyaoroshi.
There is also a peculiar bitterness from the firm acidity.
I tried to write it down, but I opened the bottle continuously after drinking quite a bit, so I don't really remember the exact taste due to the atmosphere😅.

This time it is Iyari, a limited series brewed with Yamahai.
When the bottle is opened, it has a soft fruity aroma.
When you take a sip, the aroma is subdued and the soft fruity taste and milky flavor gently spreads on the palate. It has a moderate acidity and bitterness, and the taste is clean and refreshing.
It is better not to cool it down too much to enjoy its soft taste.
The balance of Yamahai fruity flavor is good.

I loved the juiciness of Hokian Daigoku, so I was satisfied with it. The sweet acidity of Yamahai, like freshly cooked rice.
This is my second time to buy Iyari.
I thought it was delicious the last time I drank it, so I bought it again, and it's still delicious!
