Thanks my friend for taking this all the way back from shuzo! Obviously it is a sourer one on lactic acid side which I think is good to match with things that are bit oily and fatty - like meat. It comes quite smooth with a little bit of nuttiness. Will be too much if drink solely.
Sake from Shiga. It is a traditional sake brewed with 1:1 koji and water. It is a solid sake, completely different from the fruity sake we have had so far today. This is very delicious 😋.
Active niggles 🫧.
I heard that they renewed the equipment for everything.
The president of Horiichi was very complimentary of it,
I was a little skeptical, but I bought it.
Oh... this is easy to drink✨.
It was fresh and silky with just the right amount of effervescence.
It was gone in no time 🤣.
Last time it was a lion. This time it was a bear.
To be honest, I couldn't taste the difference in taste, but the sake rice is different.
It has a darker flavor that goes well with meat.
I thought it would go well with mayonnaise or sauce,
I paired it with takoyaki (octopus dumplings) and it was very good.
Paid tasting (7)
I have seen it several times at liquor stores, but this was the first time I drank it.
I looked up the meaning of the name and it means "If you persevere in doing small things, you will eventually achieve great things.
I drank too much and don't remember the taste 🙏.
Jay and Nobby, good evening 😁.
That's exactly right 😰.
The tasting is also a fixed price, so I'm poor like I'm missing out if I don't drink 😱.
I'll take a note 📝 next time 😱
CWS tends to be selected by its label.
It has a chili-like gasiness with hints of ripe apples, pears, and bananas, and a slightly sweet, milk-like richness and umami spread.
The aroma is rich and spicy.
Good evening, Kotori-san 😆.
That's quite an impressive label 😆.
I'm interested in the Carnivore Junmai 🍶.
Sake from the west is hard to find, but I'd like to drink it if I can find it: ‼️
Good evening, Mr. Muro 🐥.
It's a CWS with seasonal and carnivorous animals 😁It's heavy and maybe wild, including a spicy aroma that's a little hard to describe 🤭It tasted as good as the meat dish 😋.
Takashima City, Shiga Prefecture. Yahei Fukui Shoten Co.
Haginodoro, special junmai, jujusui brewed, raindrops, stone piercing, dewy.
Jumizujikomi, an Edo period method of brewing, is a method of brewing with a 50-50 ratio of water and koji. The amount of water used is 10 to 20 percent less than normal.
This is the first time for "Amedare Ishi wo Kakutsu" to be made with freshly squeezed, unpasteurized sake.
It is served cold.
The color is clear and almost colorless.
The initial aroma is slightly sour with a hint of koji malt.
In the mouth, it flows smoothly at first, and then a rich sweetness and sweet-sourness spreads on the tongue.
It has the juiciness and freshness of a fresh sake, and the sweet and sourness neutralizes the heavy, rich sweetness, making it refreshing without being sweet on the tongue.
The sweetness is followed by a deep richness and umami, and the aftertaste is a bit alty.
The fact that Shiga Prefecture has "Haginodew" and Miyagi Prefecture has "Haginotsuru" is one letter different, and if it were a test, it would surely come up. The liquor store where I bought this sake had both brands.
Ingredients: Rice (domestic), Rice Koji (domestic)
Rice used: 100% Mizukagami produced in Takashima City, Shiga Prefecture
Polishing ratio: 60
Alcohol content: 15%.
Good evening, Nemuchi-san. I am glad you drank Haginodew, Takashima's sake 😆 I tend to put it off when I can drink it anytime even though it is delicious. I'd like to drink it next time I'm back 😊.
Hi Hirupeko, good evening 🌛There are several sake breweries in Takashima City that make delicious sake 😊I know it's easy to be put off 🤣Next time you go home, one of my classmates started a store called Donut Glasses, you should go there 😉.
Good evening, Tsuyodai 🌛It is common for sake brands to have complicated names 😅I try to drink well and remember 🤣Amedure... if you like the rich sweetness of Jumizu brewing, I recommend it 😉.
This bottle is brewed using a special method called jusui shizukomi.
It has a dense flavor.
However, it is not so maniacal that it will choose the right drinker, and is very soft and pleasant to drink.
Bought at liquor store
I liked the Concept Workers Selection at the last Brilliant I drank and bought it!
I'm sure I'll be buying a lot of jackets since some of the labels are designer-contributed 😙.
Cold Sake
Juicy pear-like aroma with a buttery richness.
Full and rich on the palate.
Fruity and acidic
Crisp aftertaste
Powerful and broad lingering aftertaste that extends a bit
Its strength and thickness are just like a bear 🐻.
