The lingering finish is pleasant and the taste is very clean, making it a great food sake!
We enjoyed it with sasakamat and oysters boiled in salt that we bought on our trip to Miyagi Prefecture!

Mild but firm sweetness. The soft round sweetness of hiyaoroshi warms the heart.
Why does it go well with fish when it is so sweet?

The more days it is aged, the more flavorful it becomes! It is indeed a versatile food sake. It is mellow, interesting, and delicious 😋 with a clean aftertaste!
Unfortunately... the Kuheiji was not my favorite... not quite enough for me😅.
I opened a bottle of Oragami (raw sake) 🍶....
Atago no matsu... as you all know, is a brewery by the name of Shinzawa Brewery whose motto is "the ultimate food sake" ✨.
This is an orikarami sake... so the top clear liquid has settled, so we had to try the top clear liquid first: ❗️
I was hoping for the piquancy of the raw sake 🍶 but... no piquancy!
But that's just the way it is... when you drink it, mmmmooooooooo sweetness and umami balance... delicious 😋.
And after mixing the next ❗️ bottle up and down...the second cup!
...the flavor of the rice increases....

Well...since it tastes this good on its own, it's the perfect sake for the upcoming nabe season 🍶.

When in doubt about what to drink during a meal, this is the sake to choose! I personally think Atago no matsu and Hakurakusei✨ are the best 😁I can't get enough of the flavor and sharpness that doesn't interfere with the food 😊.
Hakurakusei looks delicious heated 😌.
The fresh aroma enhances the new sake character. The balance of sweetness and acidity in the freshness is outstanding. It was more delicious than expected.

I got a quick taste of this year's new sake (and it was freshly opened).
It is fruity with sweetness, acidity and freshness, including the mouthfeel. The finish is easy to drink.
Mr. Shinzawa sings about food wine, but this one is too fruity to be an aperitif. It would be delicious with a cured ham with fruit. This restaurant doesn't have it, though (laughs).
