The last sake of the New Year's party was this one. It is a Junmai Daiginjo. It is a Junmai Daiginjo, but it has a certain sweetness with a slight spiciness, and when I thought it was similar to something, the manager told me it was from the same brewery as Hakurakusei.
It was indeed a wine-like flavor, and when I thought so, it became easy to drink, and after a few sips, the umami flavor increased.
First, there is a slightly fruity aroma.
In the mouth, there is a gentle spiciness and a refreshing sweetness.
It has a sweeter taste than Hakurakusei, which is also brewed by the same Niizawa brewery.
Satisfaction level: 5
This is the 3rd brand (apparently) of a sake brewery famous for Hakurakusei/Atago no Matsu. It is fire-aged, so it is not as fresh as it should be, but as a standard sake, it is quite well-balanced. I was able to drink it in one gulp.
Memorandum: A Look Back at the Past
Sake rice Kura-no-Hana
Polishing ratio 50%.
Slightly fruity. Slightly fruity. Slight sourness and bitterness in the aftertaste. I like it even though it is more dry. Delicious.
It is a brand made at the Atago no Matsu sake brewery. I had never seen it before.
I was prepared for it to be sweet because it was a junmai daiginjo, but instead it was fresh and crisp. I enjoyed it with a variety of rice dishes!
