We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. It is a delicious drink, but I think it is suitable for different situations.

Naebayama Two-stage brewing Junmai Ginjo Modest lactic acidic sweet and sourness is the entry point. Smooth sweetness spreads on the palate, and a rich bitterness lingers after it drops down the throat. Delicious! This two-step brewing is a prototype, but they are going to develop it under the brand name of "Fukanorono-MIZEN". I am looking forward to it 😄.

One cup from the Niigata antenna shop in Omotesando. So crowded in that area there today, surprised I could wait until dinner to drink this. Perhaps more enjoyable if at onsen as label suggests.

Polishing ratio 60 The mouthfeel is fresh blue and green, just like a forest, and the sweetness of the rice spreads richly. The taste is clean and light with lactic acidity, but also has a deep breadth. This is delicious. 💮 (One-stage brewing "Sour Forest" is pricey, but I want to drink it!)

When served warm, you can understand why it is called "matured dry" with its peculiar flavor and sharpness. It is said to go well with ramen... but it certainly has a peculiar flavor that is as strong as the thicker ramen of today. It does not seem to go well with light and clear flavored ramen, so I think it would be better to match it with the brewing style brewed here.

Today ＼_(omega) Kore!!!!!!! Naebayama Two-stage brewing Junmai Ginjyo Namaishu This is the first brand name sake I've ever purchased. It seems to be a new brand from the Naeba Sake Brewery in the brewing forest! It is very smooth on the palate with a slight bitterness in the aftertaste 🤤. I recommend it 😆.

Nice aroma. Apples? Maybe? Fruitiness. When I drank it, I thought it was sweet. But the lactic acidity immediately follows... I think I like it. The bitterness that remains at the end is also good. If you don't like sour taste, how about it? Naebayama Two-stage brewing Junmai Ginjo Namaishu It is said to be a prototype of a new brand.

Aromatic ginjo aroma and acidity burst in the mouth. The aftertaste is immediately clean and refreshing. It is more of a sour type of sake, but it is easier to drink than Abe-type sake. When heated, the sourness stands out, but the alcohol punch is just the right amount. Recommended for those who want to immerse themselves in the refreshing acidity reminiscent of citrus fruits.

Alcohol 18 degrees, probably ginjo. Obtained in a grab bag. Easy to drink, although the alcohol taste comes after the iso-type aroma. After a slight bitterness, it quickly becomes sharp. When heated to human body temperature, the iso-type aroma and alcohol taste become stronger and it turns dry. It is a sake that can be both mellow and dry. Interesting.

The mouthfeel is smooth with sweetness and umami, with a clean, light finish. When heated, it becomes mellow without changing its flavor. Although it claims to go well with sweets, I would not say that it is a bad match, but it does not seem to be a good match... It is hard to believe that this is from the same brewery as Kozo no Mori... a classic sake with a completely different direction...
