Mt. Naeba Unknown brand It seems it's from the same brewery as Brewing Forest. I learned about it from a friend of mine who had posted about it before me! Well, I was drinking so much that I can't remember what it tasted like, but I have a faint memory that it was delicious, so the next time I find it, I'll drink it as soon as possible. The sake cup I brought as a gift was opened on the spot and the cold sake was poured into it! Oh, cherry blossoms really bloom 🌸🌸 They enjoyed taking a video of it. Sake cups are very important. knowledge Naebayama Two-Stage Brewing" is produced by Naebayama Shuzo, a brewery that has refined its brewing techniques by continuing the delicate and difficult "one-stage brewing" process. Compared to the one-stage brewing "Kosu-Mori," it is a little lighter, smoother, and has a pronounced lactic acidity. The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. It is a delicious drink, but I think it is suitable for different situations.

Tsunan Snow Festival 2023, Niigata Prefecture The sun is setting and it's getting cold, so I warm myself up with some hot sake 🍶´-. It warms you up to the core 😆. We picked yakisoba noodles and ramen noodles ←forgot to take a picture of them Snowmobile experience Live stage performance, Tengu dance of Akazawa Kagura (Shinto music and dance) Last but not least, sky lanterns and fireworks! It was fantastic to see countless lights dancing in the night sky ✨. It was a fun and exciting event!

Naebayama Two-stage brewing Junmai Ginjo Modest lactic acidic sweet and sourness is the entry point. Smooth sweetness spreads on the palate, and a rich bitterness lingers after it drops down the throat. Delicious! This two-step brewing is a prototype, but they are going to develop it under the brand name of "Fukanorono-MIZEN". I am looking forward to it 😄.

When served warm, you can understand why it is called "matured dry" with its peculiar flavor and sharpness. It is said to go well with ramen... but it certainly has a peculiar flavor that is as strong as the thicker ramen of today. It does not seem to go well with light and clear flavored ramen, so I think it would be better to match it with the brewing style brewed here.

Today \_(omega) Kore!!!!!!! Naebayama Two-stage brewing Junmai Ginjyo Namaishu This is the first brand name sake I've ever purchased. It seems to be a new brand from the Naeba Sake Brewery in the brewing forest! It is very smooth on the palate with a slight bitterness in the aftertaste 🤤. I recommend it 😆.

When heated, the sourness stands out, but the alcohol punch is just the right amount. Recommended for those who want to immerse themselves in the refreshing acidity reminiscent of citrus fruits.

Alcohol 18 degrees, probably ginjo. Obtained in a grab bag. Easy to drink, although the alcohol taste comes after the iso-type aroma. After a slight bitterness, it quickly becomes sharp. When heated to human body temperature, the iso-type aroma and alcohol taste become stronger and it turns dry. It is a sake that can be both mellow and dry. Interesting.
