Niigata sake is often described as "light and dry," but this one has a robust "sake-like" flavor that is very typical of local sake. This is a junmai ginjo from Naebayama, a representative brand of the Naeba Shuzo brewery, which has had a brewery in Tsunan-cho, Naka-uonuma-gun, located on the border with Nagano Prefecture in the southwestern corner of Niigata Prefecture for over 100 years. The koji rice is Gohyakumangoku, and the hanging rice is Koshibuki, using melted snow water from the town, which is home to one of the 100 best waters, Ryugakubo. Even though it is a ginjo-shu, it is also delicious lukewarm.
Gorgeous aroma.
Sweet and sour on the palate, with a slightly light spiciness soon after. The aftertaste is slightly pungent, but it does not linger in the mouth.

The first sip feels like a white wine 🍾.
It has sweetness, umami, and a bitter aftertaste 😚.
I thought it was alcohol like with the occasional sharp sensation, but it was surprisingly alcohol added 🤗.
I guess all breweries are getting better at adding alcohol these days ✨.
Once again we have a souvenir from my mother🍶, Naebayama from the Naeba Sake Brewery, which she purchased on her trip to Niigata. Yuki no Mayu is well-known, but this one has a higher alcohol content of 18%. The label gives a hint of austerity.
The aroma is alcholic and deliciously spicy. When you sip it, the mildly tasty and spicy taste spreads and you feel a heavy fall. The high alcohol content warms the body. It has been a while since I drank a robust sake.
I paired it with komatsuna greens and crab cakes, and it was delicious. I think it goes well with simple salty snacks like those served at izakaya (Japanese style pubs). Delicious✨
Slightly greenish and clear, with aromas of yogurt, cooked rice, melon, honeysuckle, and lime. The attack is rather strong and refreshing.
