I saw this at my local supermarket and bought it.
It's made from 100% local Koshitanrei, with 55% polished koji rice and 75% polished kake rice. Is it unusual that the polishing of koji rice and kake rice are so different? The price is rather low, and it is experimental. I was interested in this experimental sake.
It is slightly foamy. Flavors like lychee and grape. The impression changes completely in the second half when it is contained. At the end, you can feel the body. This is a new development for me. It's complex, but not cohesive, like a blend of different alcohols.
It's definitely an interesting sake. I'm hoping for a second batch or something!

Slight alcohol smell. The taste is weak and mellow in the mouth. After that, it goes away sparsely, but it is gentle taste in general. It has no peculiarities and is perfect for eating.
Most of the super dry sakes I've had have a strong acidity, but this one is crisp and refreshing. It's relatively mild on the palate, but the spiciness doesn't linger, so it's a great sake to drink while eating!
It is a versatile sake that goes well with both sweet and salty snacks!
This sake was brewed for the Niigata Sake no Jin.
It is a limited sake that was sold because 2021 was also cancelled.
I want to go to the Niigata Sake Festival someday.

I bought this Uonuma rice in a jacket.
Since it's from Niigata, I thought it would be light and dry or a little rice-y, but it turned out to be a bit disappointing in a good way.
It has a sweet taste with a hint of melon. Rice flavor and sourness, the sourness reminds me a little of cucumber.
The mouthfeel is gentle.

Junmai Ginjo made from rice and rice koji produced in Niigata Prefecture and the rich water of Uonuma, Niigata. It is a famous sake from Takanoi Sake Brewery near Ojiya Station on the Joetsu Line.
When you sip it and taste it carefully, it is also fruity. It smells like grapes. However, unlike wine, the sake is tight and firm. It is very well made. It reminds me of the clear stream of Uono River.
By the way, we had Mapo Tofu as a snack.
