Lingering taste: Short and sharp. The umami of rice and light bitterness quickly disappear.

It is designed to be very dry with a sake meter of +12, but the umami of the rice can be felt even in the dryness.
The alcohol taste is a bit harsh on its own, but it is quite good as a food sake. I drank it with salted squid and salmon roe marinated in soy sauce, and it went perfectly with them.
It is also suitable for warming up, and since it becomes a little milky, it is best drunk with hot tofu.
Pairing] Goes well with simple Japanese dishes such as grilled fish, salted fish, yudofu, pickles, etc.

When I asked the owner about the label, which I had never seen before, he told me that it was made from a newly developed rice called "Niji no Kirameki," which is resistant to the recent summer heat.
The moment I put it in my mouth, I felt a slight carbonation and juiciness. The label says it is refreshingly dry, but I personally thought it was the kind of sake I like with umami flavor.
R3BY was served warm. The color is amber. It has a sweet umami taste with a mellow matured feel, and the acidity of the sake is gentle.
Serve with blue cheese with mirin (sweet sake).

I thought it would be a slightly colored sake with a sense of maturity, but as the name "super-harsh" implies, it was just as dry and crisp as the name suggests, and was a delicious sake that was easy to drink.
