My favorite sake from Fukui Prefecture, Hanagaki's Super Spicy Junmai.
Fully fermented, with a Sake meter of +12, it has little sweetness, but a strong rice flavor. Not too classic, but delicious with a refined flavor. Because it is dry, it went well with gyoza as expected.
The tangy, spicy taste is accompanied by a strong sense of rice flavor.
The slight effervescence keeps the taste from becoming too rich and mellow.
