The mouthfeel is rather strong, with a hint of sweetness, but with firm acidity and a slightly strong, full-bodied bitterness on the finish.
It has a refreshing mouthfeel and can be drunk as much as you like as a food wine.

This is the highest grade daiginjo-shu named after Kuroganeya, the house name of Tsukasa Botan, and is not usually sold but is entered in various sake competitions.

Because it is brewed when the temperature is slightly higher, it is fermented for fewer days, resulting in a sharper acidity.

The gift was a famous sake from Kochi, Shibotan and Minami. Today we will have a glass of Shibotan and bonito.

The lactic acidity and the fizzy feeling that I often hear in sakénois is like an adult cider.
It does not go well with bonito.
So, when in doubt, warm up the sake.
This is good, excellent. Roughly hard and spicy, but with a distant lactic sweetness.
Today's bonito is not so good, but the nameko mushrooms are delicious. Good sake with good snacks.

Kochi is a place that holds a special place in my heart.
I thought Kochi sake was light and dry, but this CEL-24 is very fruity and sweet, like a sweet white wine!
I was surprised to find out why the letters of Shibobotan are upside down.
When I think of Tsukibotan, I think of drinking dry sake together with cups of Okame, Hyottoko, and Tengu, but this sweet sake seems to be more cute.
