For a long time, Shibotan was my father's favorite brand and he used to drink it well with hot sake.
I was happy to find a draft of Funaka Hachisaku that I wanted to try. I didn't mind the super dryness of the sake, it had a subtle umami flavor and a crisp cut that left a sour taste, but it complemented the food with which it was served.
