It was fresh and fun! Mr. Aladdin Mr. Maru Mr. Yoohee Hirupeko-san And Rafa Thank you very much for your hard work 👋😇 Now, this is Gonohomare. When I talked to the brewer, he told me everything... He said, "We were the first brewery in Japan to introduce Nama-Shu and Hiyayoroshi! This is a very venerable sake brewery! I tasted three kinds of sake and this one had the best flavor among them, so I bought it as a thank-you for tasting it. Drinking at home What? It was a different person from when I tasted it. The freshness that comes to the forefront and the bitterness that follows it are the first things that come to the fore. The sweetness and umami are forcefully suppressed, giving the impression of a "rough" taste. It is probably a sign of freshness. I will let it rest. 4th day Dry💦. Maybe too hard for beginners? I expected sharp acidity from the ashy aroma, reminiscent of the sake's "生酛造" (生酛) method, but was pleasantly surprised to find that the acidity was quite mild. It has a very mild acidity, and a sweetness that gently accompanies the acidity. It is a very rare taste. I paired it with tonight's hashed rice as a test. But it didn't go well with it.

「阪急蔵元まつり2023」10蔵目。 茨城県・須藤本家「郷乃譽」「山桃桜」「山霞」 現存する日本酒メーカーとしては最古の酒蔵で、現存日本の企業の中でも9番目に古い。日本で初めて生酒を出した蔵で、新米にこだわり純米大吟醸のみを醸す。 一番注目してたので、滞在時間の長く、全種試飲したブース。 社長にとても丁寧に、酒造りからコンセプトなど有意義なお酒談義を聞かせて頂きました。 社長さんはめちゃくちゃ英語の発音が良い😁 全部飲む気だったので、これ飲んどけは忘れた😅 「山霞 純米大吟醸 無濾過・生々」 「山桃桜 純米大吟醸 無濾過・生々」 「郷乃譽 純米大吟醸 無濾過・生々」 「雪の舞スパーリング 純米大吟醸 無濾過・生々」 「山霞 純米大吟醸 無濾過・火入 生貯蔵」 「郷乃譽 生酛純米大吟醸 無濾過・生貯蔵」 「郷乃譽 黒金純米大吟醸 無濾過・生々」 あれこれ飲ませて頂いてると、アラジンさんも登場。 一番の好みだったのが「郷乃譽 生酛純米大吟醸」で、酸味が優しくて衝撃。 昔からの本来の生酛は、すっぱくないとご教授頂きました。 やっぱり最古の蔵元は印象深かった💕

Purchased at a liquor store. The website lists the stores that carry it. Cold sake. Not fruity, but fresh aroma. It is said to be the first sake brewery in Japan to produce nama-shu. Among all the nama-shu I have had, this one gave me the impression of being particularly dry. My concept of nama-shu was broken. Also, there was a sourness in the first sip, but it gradually faded as I drank. It was also sharp and had a normal aftertaste. The only sake from Ibaraki Prefecture that I drank was Morishima and Meiri Sake Brewery, but I had the impression that it was not sweet. I would like to try Raifuku next. Good as a food sake. Good for beginners and intermediate sake drinkers.

Gonohonomoto Junmai Daiginjo Unfiltered Namaizu 15-16% 50%, Kasama rice, 720ml, 1999 yen We visited Sudo Honke, the brewery that Seiji Rokkaku visited on his drinking trip. There is a magnificent garden and you can feel the history of the building. The first sip. The first sip. Freshness. Rather, it is a bit watery. There is a faint fruitiness, but it is not conveyed in the taste. No umami. I couldn't tell if it was unfiltered or not. Maybe it's not the right timing to pair it with food? Tried again on the second day. It was still watery. To put it another way, it is refreshing. It is a junmai daiginjo, so it is polished, but it does not have a full-bodied feeling. It does not have a cloying taste, but it is not the type of sake I would like to drink. It is like drinking disinfectant alcohol. A little disappointing for the price.
