Sake Brewer's Festival" *Tasting Washoy no Kai
Usually I visit each booth solo, that I do, but this time we formed a party and visited all the booths together.
It was fresh and fun!

When I talked to the brewer, he told me everything...
He said, "We were the first brewery in Japan to introduce Nama-Shu and Hiyayoroshi! This is a very venerable sake brewery!
I tasted three kinds of sake and this one had the best flavor among them, so I bought it as a thank-you for tasting it.

It was a different person from when I tasted it.
The freshness that comes to the forefront and the bitterness that follows it are the first things that come to the fore.
The sweetness and umami are forcefully suppressed, giving the impression of a "rough" taste.
It is probably a sign of freshness.

Maybe too hard for beginners?
I expected sharp acidity from the ashy aroma, reminiscent of the sake's "生酛造" (生酛) method, but was pleasantly surprised to find that the acidity was quite mild. It has a very mild acidity, and a sweetness that gently accompanies the acidity. It is a very rare taste.
I paired it with tonight's hashed rice as a test.
But it didn't go well with it.
